Bethesda have stated that Skyrim is mostly complete; the short gap between announcement and release was a calculated act; Bethesda plan to release more information and media in January. I think Bethesda wanted to avoid Molyneux-style announcements of features that would later be cut and better manage the expectations of gamers. In other words, I believe Skyrim may be released on the announced date or very close.

Out of my own interest to play the game sooner than later, Lee, I'd be happy to be proven wrong.
